Celebrate Spring in Style

You may have seen the posts on Instagram - we're popping up at Borris House on Saturday 2nd March 2024 for a unique dinner experience. There's a minimum party size of four as we'd like to create an atmosphere with chat and laughs and less of the whispered exchanges and doe-eyed looks. There's a time and place for everything and this is a perfect time and place to celebrate with your friends!

It's going to be very special - working with Paul and his team again. I was fortunate to work with them at their inaugural pop-up restaurant at the Festival of Writing & Ideas last year. We did shorter tasting menus at two lunch services on the Saturday and Sunday. Capacity was just over 30 per service and all sittings were oversubscribed. The event was great fun for diners and staff alike, the feedback was tremendous, and I have been keen to work with Paul and his team again. So here we are...

Paul has a flair for taste combinations and is designing a fabulous 6 or 7 course tasting menu (I'm not sure exactly, until he's finished) using inspiration from Europe and Asia.

Each course will be paired with wine by Paul and Harriet Tindal - one of the few Masters of Wine in the world (409 at last count and only 8 working in Ireland) - using the wines from premium distributer Tindal Wine Merchants.

We are also including a selection from Carlow's own Walsh Whiskey including the Irishman Single Malt, though I'm not sure which others until the menu is complete.

And all this at Borris House - one of the loveliest country houses in Ireland both in terms of physical aesthetic and also atmosphere. We're dining in the banquet hall (ballroom) and you can also stay the night and make a weekend of it.
